Our clients hotel is located in the West Highlands, near Fort William. The hotel has an 80 cover restaurant with an already excellent reputation. They are looking for an inspiring individual who can help them take the business to a new level. The restaurant and bar combine 'finer' dining and busy gastropub style operation, with small meetings and events facilities.
You'll have a thirst for knowledge, passion for inspirational food and motivate the team to achieve food to specification and therefore achieve sales and profits. Be able to lead by example, setting the pace and standards through strong communication. The successful candidate will have full responsibility for the menus and its development ensuring that the kitchen team are well trained and committed with a good work ethic. Cooking for between 20 and 80 covers per service the emphasis will be on quality and technique to ensure both repeat and new business. The management of staff, purchase and waste costs are vitally important and need to be closely monitored.

Please note the remote location, it would be beneficial for the candidate to have a driving license and a car but live-in accommodation could also be arranged if needed.
